Gluten Free Lasagna Skillet

This family dinner packs all the cozy, cheesy flavor of lasagna—without the layers or the mess. Made entirely in one pot (or skillet!) using gluten‑free noodles, your choice of ground meat, marinara sauce, and bubbly cheese, this dish comes together in about 30 minutes and is packed with flavor kids actually eat!

Ingredients
  

  • 1 lb ground italian sausage
  • 1 small onion, minced
  • 1 box gluten free penne pasta
  • 2 cups water
  • 2 cups marinara sauce
  • 15 oz ricotta cheese
  • 1 tsp italian seasoning
  • 2 oz mozzarella cheese, shredded
  • 2 tbsp grated Parmesan cheese

Method
 

  1. In a large non stick skillet, brown italian sausage and onion until sausage is fully cooked.
  2. Add in pasta, water and marinara sauce. Stir well. Bring to a boil.
  3. Reduce heat, cover and simmer until pasta is cooked (took me about 10 minutes, but keep an eye on it, as gluten free pasta can take longer than traditional pasta).
  4. In a small bown, combine ricotta, parmesan, mozzarella and italian seasoning.
  5. When pasta is cooked, spoon the cheese mix into the pan, stir to combine.
